Grilled Chicken Breasts with Apple-Cranberry Glaze Recipe

This sweet chicken recipe has a very autumnal feel.

Ingredients

Apple-cranberry glaze:
2 Tbs. red wine vinegar
2 Tbs. sugar
2 Tbs. finely diced dried cranberries
1/2 C. apple preserves or jam
Salt to taste
White pepper to taste

Chicken:
4 boneless, skinless chicken breasts, 4-6 oz. each
1 Tbs. olive oil
Salt and pepper

Directions

To make apple-cranberry glaze: In a small saucepan, heat the vinegar and sugar over medium heat until the mixture boils and the sugar dissolves. Add the apple preserves or jam, whisk in the dried cranberries and bring it to a boil. Remove from heat. Season with salt and pepper to taste. To make chicken: Preheat the grill to medium-high. Sprinkle the chicken with salt and pepper and drizzle with olive oil. Place the chicken on the grill and cook until the juices run clear, 6-8 minutes per side. Place the chicken on a serving platter and brush it with the apple-cranberry glaze.

Ingredients

1 C. cider or wine vinegar (or herb vinegar)
1 C. water
1 1/2 tsp. salt
1 Tbs. garlic powder or granules
1 Tbs. chili powder
1 1/2 tsp. paprika
1 tsp. hot pepper sauce
2 Tbs. Worcestershire sauce

Directions

Combine all ingredients in a container. You can use a shaker or brush the mixture on the meat. Baste pork, chicken, or beef frequently while grilling.

1/4 C. cider vinegar
1/2 tsp. garlic powder
1 dash liquid smoke
1/3 C. sugar
1/8 C. Worcestershire sauce
1/2 tsp. salt
1/2 tsp. black pepper
1 pat butter or margarine
1 Tbs. cornstarch (optional)
