Ingredients

* 2 tsp. garlic powder
* 2 tsp. ground black pepper
* 2 tsp. salt
* 2 tsp. mustard powder
* 2 tsp. chili powder
* 2 tsp. ground cumin
* 2 tsp. white sugar
* 2 tsp. paprika
* 1/2 tsp. dried oregano

Directions

In a small bowl, combine all ingredients. Mix well and apply to meat. Stores well in airtight containers. Good on ribs, pork chops, etc.

Korean Bool Kogi Recipe

Ingredients

* 1 1/2 lb. bool kogi marinated beef ribs
* 6 oz. rice noodles
* 3 Tbs. soy sauce
* 1 Tbs. toasted sesame oil
* 1 Tbs. sugar
* 2 garlic cloves, crushed
* 1 carrot, shredded
* 1 C. sliced mushrooms
* 2 green onions, thinly sliced

Directions

Cook meat over medium-high heat over a grill to desired doneness.  Remove meat and cover with foil for 10 minutes.

Cook noodles according to package and drain.  Whisk together soy sauce, sesame oil, sugar, and garlic until combined.  Pour dressing onto cooked noodles and toss well, then add carrots and mushrooms.

Ingredients

* 3 lg. ears corn, husks and silks removed
* 4 (8- to 10-inch) low-fat flour tortillas
* 1 C. reduced-fat Monterey Jack cheese, shredded
* 1/2 C. salsa
* 2 green onions, trimmed and thinly sliced
* 1 head romaine lettuce, thinly sliced
* 1 Tbs. olive oil
* 1 Tbs. cider vinegar
* 1/2 tsp. ground black pepper
* 1/4 tsp. salt

Directions

Prepare grill. Place corn on hot grill rack over medium-high heat. Cover grill and cook corn, turning frequently, until brown in spots, 10 to 15 minutes. Transfer corn to plate; set aside until cool enough to handle. With sharp knife, cut kernels from cobs.

Salad of Peppers Recipe

Ingredients

* 10 banana peppers
* 1 sm. can tomato sauce
* 1 tsp. salt
* 1 fresh tomato
* garlic, chopped
* 1 Tbs. vinegar
* 3 Tbs. oil

Directions

Place peppers on barbecue and roast or broil. Peel skins. Cut fresh tomato in small pieces. Add to tomato sauce, oil, chopped garlic and simmer until tomato pieces are tender. Cut up peppers and add to sauce. Simmer for 3 more minutes. Chill and serve as salad.

Barbecue Chicken Breasts Recipe

Delicious chicken breasts stuffed with cheese, wrapped in bacon and smothered with barbecue sauce! Sweet, hot, spicy, or just plain depending on the sauce and cheese. Quick and tasty.

Ingredients

    * 6 chicken breasts
    * 1 bottle barbeque sauce
    * 6 slices cheese (jalapeño/American or Swiss)
    * 6 slices maple bacon
    * toothpicks for securing

Directions

Pound 6 chicken breasts. Place one slice of cheese on top of each. Roll up the breast and wrap a piece of bacon around the breast. Secure with a toothpick. Place barbeque sauce in a flat bowl and drench the breast with sauce. Place in casserole dish in the refrigerator for a few hours. Remove from casserole and put on grill for about 20-30 minutes depending on the thickness of the chicken breast. Note: If you’re having a cookout, marinate the breasts in the early morning.

Spicy Barbecued Chops Recipe

Ingredients

    * 1 Kg. lamb forequarter (barbecue) chops
    * 1/4 C. tomato sauce
    * 2 Tbs. barbecue sauce
    * 2 tsp. Worcestershire sauce
    * 1 Tbs. brown vinegar
    * 1 tsp. prepared English mustard
    * 2 Tbs. brown sugar (or to taste)

Directions

Trim chops if necessary. Mix remaining ingredients in a jug/bowl. Baste both sides of the chops and leave to marinate for at least 20 minutes (or until ready to cook). Sear chops on each side on barbecue, brush with glaze as you turn them. Turn and baste frequently during cooking. Serve with your favorite pasta and potato salads.

Tropical Tilapia Recipe

Ingredients

* tilapia fillets
* 1/2 whole pineapple, cubed
* 1 red bell pepper
* 2-4 C. fresh baby spinach
* 1 scallion
* 2 C. white jasmine/basmati rice
* Old Bay seasoning (to taste)

Directions

Combine pineapple and sliced red pepper in a saute pan. Cook over medium heat until soft. Season tilapia with Old Bay (or similar seafood seasoning) - only lightly. Cook on the stove top or on the grill just until fish flakes.

Ingredients

* 1/4 C. vegetable broth
* 2 Tbs. olive oil
* 1 tsp. chopped fresh thyme leaves
* 1/4 tsp. salt
* 1/4 tsp. coarsely ground black pepper
* 4 med. portobello mushrooms, stems removed
* 1 lemon
* 1/3 C. mayonnaise
* 1 small green onion, trimmed and minced
* 4 lg. buns
* 1 bunch arugula, trimmed

Directions

In glass baking dish, mix broth, oil, vinegar, thyme, 1/8 teaspoon salt and 1/8 teaspoon pepper.  Add mushrooms, turning to coat.  Let stand, turning occasionally, 30 minutes.
