Citrus Grilled Vegetables Recipe

A grated grilling basket makes grilling vegetables much easier. You can barbecue them without one, but you may lose a few vegetable pieces in the coals.

Ingredients
1/3 C. olive oil
1 Tbs. fresh lemon juice
1 Tbs. fresh lime juice
1/2 tsp. ground cumin
1 sprig of fresh rosemary OR 1/4 tsp. dried rosemary
2 red bell-pepper, seeded and cored and sliced into 6 large pieces
3 large carrots, sliced lengthwise into 1/4 inch thick strips
1 medium-sweet onion such as Texas or red, sliced into 1/2 inch rounds
2 summer squash, such as zucchini, yellow squash or pattypan, sliced lengthwise 3/4 inch thick
Directions
Combine first 4 ingredients in a large bowl and whisk together. Add vegetables to the citrus mixture and toss. Let sit for 15 minutes to 1 hour. Heat barbecue to a medium heat. Grill vegetables until slightly soft. Serve hot or at room temperature.
