Ingredients
* 1 lg. onion, thinly sliced
* 1 Tbs. plus 1 tsp. olive oil, divided
* 2 garlic cloves, minced
* 2 C. fresh arugula or baby spinach
* 4 pita breads (6 in.)
* 8 oz. fresh mozzarella cheese, thinly sliced
* 2 plum tomatoes, cut into 1/4-in. slices
* 1/4 C. sliced ripe olives
* 2 Tbs. capers, drained
Directions
In a small skillet, saute onion in 1 Tbs. oil until tender. Add garlic; saute 1 minute longer. Remove and keep warm. In the same pan, cook arugula just until wilted; remove and keep warm.

Ingredients
* 2 C. chopped plum tomatoes
* 1/2 C. minced fresh basil
* 1/3 C. finely chopped red onion
* 3/4 C. Italian salad dressing, divided
* 4 boneless skinless chicken breast halves (4 oz. each)
* 4 slices Italian bread (1 in. thick), toasted
* 4 slices part-skim mozzarella cheese
Directions
In a small bowl, combine the tomatoes, basil, onion and 1/2 cup dressing; set aside. Flatten chicken to 1/4-inch thickness.
Grill chicken, covered, over medium heat for 3-5 minutes on each side or until juices run clear, basting occasionally with remaining dressing. Layer each slice of toast with a chicken breast, cheese slice and tomato mixture.

Ingredients
* 1 lb. beef top sirloin steak (1-in. thick)
* 1/4 tsp. salt
* 1/8 tsp. pepper
* 2 (6 oz. each) pkg. fresh baby spinach
* 1 C. chopped sweet red pepper
* 3/4 C. chopped tomatoes
* 1/3 C. chopped red onion
* 1/3 C. ranch salad dressing
* 2 Tbs. picante sauce
* 1 tsp. taco seasoning
Directions
Sprinkle steak with salt and pepper. Grill steak, covered, over medium heat for 8-10 minutes on each side or until meat reaches desired doneness. Meanwhile, combine the spinach, red pepper, tomatoes and onion; divide among four serving plates. In a small bowl, combine the salad dressing, picante sauce and taco seasoning. Slice steak against the grain; arrange over salad. Drizzle with dressing.

These yummy chicken and vegetable kabobs are so easy to make!

Ingredients
* 3/4 C. lemon dill sauce
* 2-3 boneless, skinless chicken breasts, cut into 1-inch chunks
* 2 zucchini, unpeeled and cut into 1/2 inch rounds
* one 10-oz. container whole white mushrooms
* 1 large red bell pepper, with seeds removed, cut into 1-inch pieces
* 10 cherry tomatoes
Directions
Marinate chicken in 1/3 C. sauce for a few hours in the fridge. Assemble skewers by alternating ingredients. Dispose of marinade that the chicken was in, but use the remaining sauce to brush the skewers.
Cook on the grill.
