Chimichurri Grill Recipe

Chimichurri sauce will add some bold flavor to your grilled meats!

Ingredients

* 4 steaks (rib-eye or tenderloin)
* 4 sausages
* 2 Tbs. steak seasoning
* 1/4 C. soy sauce
* 1/2 C. olive oil
* chimichurri sauce

Directions

Combine steak seasoning, soy sauce, and olive oil into a bowl or Ziploc bag.  Add steaks and marinate for at least 30 minutes.  Grill steaks and sausage to desired doneness.  Top with spoonfulls of chimichurri sauce.

Ingredients

* 2 tsp. garlic powder
* 2 tsp. ground black pepper
* 2 tsp. salt
* 2 tsp. mustard powder
* 2 tsp. chili powder
* 2 tsp. ground cumin
* 2 tsp. white sugar
* 2 tsp. paprika
* 1/2 tsp. dried oregano

Directions

In a small bowl, combine all ingredients. Mix well and apply to meat. Stores well in airtight containers. Good on ribs, pork chops, etc.

Roadhouse Steaks with Ancho Chile Rub Recipe

Ancho chile powder is made from ground, smoked, dried poblano peppers, and it gives this rub a subtle smoky heat. For a milder flavor, cut back on the ground black pepper or ancho chile powder, and omit the ground red pepper.

Ingredients

1 Tbs. freshly ground black pepper
2 tsp. ancho chile powder
4 tsp. Worcestershire sauce
1 tsp. Dijon mustard
1/2 tsp. salt
1/2 tsp. ground cumin
1/8 tsp. ground red pepper
2 garlic cloves, minced
4 4-oz. beef tenderloin steaks, trimmed
cooking spray

Directions

Prepare grill. Combine first 8 ingredients in a small bowl. Rub spice mixture evenly over steaks; let stand 10 minutes. Place steaks on a grill rack coated with cooking spray. Grill 5 minutes on each side or until desired degree of doneness.

Grilled Steak Recipe

Ingredients

4 (8-oz..) beef top sirloin or New York steaks
3 Tbs. vegetable oil
1/2-1 oz. Montreal steak seasoning
1/2 C. (1 stick) unsalted butter, room temperature
1 Tbs. shallots - minced
1/2 tsp. garlic - minced
2 tsp. parsley - minced

Directions

Stir together the butter, minced shallots, garlic and parsley. Season with salt and freshly ground black pepper to taste and scrapeonto a piece of parchment or wax pepper. Roll into a small cylinder and chill in refrigerator or freezer. Put the oil and steak spice in a shallow pan, and dip the steaks well on both sides to coat with seasonings. Prepare an outdoor grill for high heat and lightly oil the grate. When fire is hot, grill steaks over high heat to desired doneness, turning once or twice asneeded. Remove to a platter and let rest for 5 minutes beforeserving. In the meantime, unwrap the chilled butter and slice intorounds. Lay 1-2 rounds on each warm steak and serve immediately.

Grilled Ribeye with Blue Cheese Recipe

Ingredients

1/3 C. red wine vinegar
1/3 C. water
2 Tbs. soy sauce
1 med. sweet onion, sliced
2 cloves garlic, crushed
freshly cracked black pepper, to taste
2 12 oz. Ribeye steaks
1/4 C. blue cheese, crumbled

Directions

Combine first six ingredients in a zip lock style bag. Add the steaks and marinate covered in refrigerator, for two hours. Grill steak on one side for 5 - 7 minutes. Turn and top carefully with crumbled blue cheese. Cover and grill another 5 - 7 minutes or until it’s cooked to your liking. Times will vary depending on the heat of your grill.

Grilled Spiced Rib-Eye Steaks Recipe

Ingredients

8 1-inch thick bone-in rib-eye steaks (1 lb. each)
1/4 tsp. ground allspice
1 tsp. ground cumin
2 Tbs. kosher salt

Directions

Prepare grill for cooking. Let steaks stand at room temperature 30 minutes. Stir together allspice, cumin, and salt. Pat steaks dry and sprinkle spice mixture onto both sides of steaks to lightly coat, pressing to adhere.

Grill steaks in 2 batches on an oiled rack set 5-6 inches over glowing coals 4-5 minutes on each side, or until an instant-read thermometer inserted horizontally 2 inches into thickest part of meat registers 130 degrees for medium-rare. Transfer steaks to a platter and let stand 10 minutes.

Ingredients

1/2 lb. boneless beef sirloin steak, cut into thin bite-size strips
2 slices (1/2 inch thick) large onion, separated into rings
1/2 medium green bell pepper, cut into thin bite-size strips
2 Tbs. fajita seasoning
2 Tbs. lime juice
4 8-inch flour tortillas
4 Tbs. sour cream
4 Tbs. salsa

Directions

Heat closed contact grill 5 minutes. Meanwhile, in large nonmetal dish or resealable food-storage plastic bag, mix steak, onion, bell pepper and fajita seasoning; stir or turn bag to coat. When grill is heated, place steak and vegetables on bottom grill surface, spreading evenly; close grill. Cook 4-6 minutes or until steak is desired doneness and vegetables are crisp-tender. Place steak and vegetables on plate; drizzle with lime juice.
