Even friends that told me asparagus is their least favorite vegetable have fallen in love with this recipe. Great summer side dish or main course for vegetarians.

Ingredients
* 2 bunches asparagus, washed and ends snapped off
* 1/2 C. balsamic vinegar
* 1/2 fresh lemon, juiced
* 1/2 C. extra virgin olive oil
* 3 fresh garlic cloves minced or jarred garlic equivalent
* 1 Tbs. each fresh oregano and basil, finely chopped (or in spice jar – but fresh recommended)
* kosher salt and cracked black pepper to taste
* crushed red chili flakes to taste
* 1 jar roasted red pepper strips
* 1 Cippolini onion, red onion or shallot finely chopped (optional)
* 1-2 bricks Asiago cheese - shaved

Ingredients
1 1/2 lbs. large or jumbo fresh California asparagus, trimmed
Olive oil, as needed
Salt, as needed
3/4 C. drained rough-chopped roasted red bell pepper (from a jar)
2 Tbs. rough-chopped sun-dried tomato (packed in oil, drained)
2 1-inch slices baguette (about 1 ounce), lightly toasted, torn into pieces
2 Tbs. blanched, slivered almonds, toasted
1 clove garlic, roughly chopped
1/2 Tbs. white wine vinegar
1/2 Tbs. chopped parsley, preferably Italian flat leaf
1/8 tsp. salt
1/8 tsp. crushed red pepper or to taste
Cool water, as needed

Ingredients
1 bottle (8 oz) Italian dressing
1 loaf French bread; cut into slices
Directions
Spread Italian dressing generously over cut surfaces of bread. Place on grill over medium temperature. Grill 3 minutes on each side until toasted. Serve with salad or grilled meat.

My family, including the kids (13 and 12) loved it. The infused flavor came through on the back notes of the taste. Rare that they ask for a second helping of vegetables - they did this time!

Ingredients
Portobella mushroom, sliced
Onion, cut into large chunks keeping the root in tact
Carrots, sliced in 1/2-inch pieces diagonally
Fingerling potatoes, sliced
Blood Orange O Olive Oil
1/4 C. red wine
Kosher Salt
Directions
Infuse vegetables with olive oil for grilling (portabella, onion, carrots) and grill. Sauté sliced fingerling potatoes in the olive oil to pick up the flavor before combining with the mushroom and onion mixture. When combined, add red wine and some kosher salt for seasoning.

A grated grilling basket makes grilling vegetables much easier. You can barbecue them without one, but you may lose a few vegetable pieces in the coals.

1/3 C. olive oil
1 Tbs. fresh lemon juice
1 Tbs. fresh lime juice
1/2 tsp. ground cumin
1 sprig of fresh rosemary OR 1/4 tsp. dried rosemary
2 red bell-pepper, seeded and cored and sliced into 6 large pieces
3 large carrots, sliced lengthwise into 1/4 inch thick strips
1 medium-sweet onion such as Texas or red, sliced into 1/2 inch rounds
2 summer squash, such as zucchini, yellow squash or pattypan, sliced lengthwise 3/4 inch thick

I don’t get an invite to any family or friend bar-b-cue without the request that I be “in charge” of the corn!! Once you’ve tried this corn I know you’ll agree. Grilling brings out the sweetness of the corn along with the smoky kick of the chili powder and bacon. Delicious!!
