* Several branches rosemary, allowed to dry overnight
* 36 plain wooden toothpicks, soaked in water at least 30 minutes.
* 12 bamboo skewers, soaked in water for at least 30 minutes
* 18 fresh medium shrimp
* 18 fresh sea scallops
* 18 very thin lemon slices
* 18 very thin lime slices
* 24 crimini mushrooms
* 12 cherry tomatoes
* Olive oil

A deliciously light and refreshing tropical dish for the spring/summer season. This requires only 6 ingredients for a full meal!

Ingredients
* tilapia fillets
* 1/2 whole pineapple, cubed
* 1 red bell pepper
* 2-4 C. fresh baby spinach
* 1 scallion
* 2 C. white jasmine/basmati rice
* Old Bay seasoning (to taste)
Directions
Combine pineapple and sliced red pepper in a saute pan. Cook over medium heat until soft. Season tilapia with Old Bay (or similar seafood seasoning) - only lightly. Cook on the stove top or on the grill just until fish flakes.

These shrimp kabobs go great with sweet potato fries and a spinach salad. This dish was created while my wife was on a “Fast & Forever” diet. We use Newman’s Oil and Vinegar Salad dressing.

Ingredients
* 20-25 large raw shrimp, peeled
* Montreal chicken seasoning
* Newman’s Own oil & vinegar salad dressing
Directions
Peel shrimp. Season the shrimp by placing the shrimp in a single layer in a 9×13-inch glass baking dish. Shake seasoning over the shrimp, turn the shrimp, and then season the other side. Pour approximately 1/2 bottle of the Newman’s dressing over the shrimp. Let the shrimp marinate for about 1 hour in the refrigerator. Place 4-5 shrimp on a wooden skewer. This should produce 4-5 skewers. Place the skewers on a hot grill and grill until the shrimp turn pink, about 5 minutes, turning once.

This is a great summertime picnic food. It’s a great dish that will have folks begging for the recipe. These kabobs were perfected for picnics at outdoor concerts in Ravinia Park just outside Chicago. They were a hit, especially when paired with a chilled Pinot Grigio.

Ingredients
16 jumbo shrimp raw, shelled and deveined
2 lbs. frozen roasted sweet potatoes
1 sprig rosemary leaves
1/2 C. olive oil, divided
juice of 1 lemon
1/2 tsp. paprika or chili powder
salt and pepper
8 kabob skewers, soaked in water and cut in half

This simple recipe is very healthy because there is very little seasoning besides lime juice and some salt and pepper.

Ingredients
4 6 oz. albacore tuna steaks, 1 inch thick
3 Tbs. extra virgin olive oil
Salt and ground black pepper to taste
1 lime, juiced
1/2 C. hickory wood chips, soaked
Directions
Place tuna steaks and olive oil in a large resealable plastic bag. Seal, and refrigerate for 1 hour. Preheat the grill for medium heat. When coals are very hot, scatter a handful of hickory or mesquite wood chips over them for flavor. Lightly oil grill grate. Season tuna with salt and pepper, and cook on the preheated grill approximately 6 minutes, turning once. Transfer to a serving platter, and drizzle with freshly squeezed lime juice. Serve immediately.

Ingredients
24 fresh basil leaves
12 thin slices prosciutto, each cut in half lengthwise
24 extra-large shrimp, peeled and deveined, or large sea scallops
24 bamboo skewers, soaked in water for at least 30 minutes before grilling
Garlic Dipping Sauce:
1/3 C. red wine vinegar
2 Tbs. Dijon mustard
1 large clove garlic, chopped
1 C. olive oil
Directions
Place 1 basil leaf at the short end of a slice of prosciutto and a shrimp on top of the basil. Roll the shrimp in the prosciutto, then thread lengthwise onto a skewer. Repeat with the remaining basil, prosciutto, and shrimp. Place the skewers on a baking sheet and refrigerate until ready to cook.
