Margarita Chicken Recipe

This tangy grilled chicken is marinated in garlic and lime. Serve with roasted corn on the cob and lemonade for a perfect summer dinner!

Ingredients

* 1 10-oz. can frozen non-alcoholic margarita mix, thawed
* 3 Tbs. lime juice
* 3 garlic cloves, minced
* 4 boneless skinless chicken breast halves (6 oz. each)
* 1/4 tsp. salt
* 1/4 tsp. pepper

Directions

In a small, combine the margarita mix, lime juice and garlic. Pour 1 cup marinade into a large resealable plastic bag. Add the chicken; seal bag and turn to coat. Refrigerate for 2-4 hours. Cover and refrigerate remaining marinade.

Ingredients

* 3 lg. ears corn, husks and silks removed
* 4 (8- to 10-inch) low-fat flour tortillas
* 1 C. reduced-fat Monterey Jack cheese, shredded
* 1/2 C. salsa
* 2 green onions, trimmed and thinly sliced
* 1 head romaine lettuce, thinly sliced
* 1 Tbs. olive oil
* 1 Tbs. cider vinegar
* 1/2 tsp. ground black pepper
* 1/4 tsp. salt

Directions

Prepare grill. Place corn on hot grill rack over medium-high heat. Cover grill and cook corn, turning frequently, until brown in spots, 10 to 15 minutes. Transfer corn to plate; set aside until cool enough to handle. With sharp knife, cut kernels from cobs.

Ingredients

* 8 (8-inch) flour tortillas
* 8 oz. shredded cheddar cheese (about 2 C.)
* 1 jar (16 oz.) PaceĀ® Chunky Salsa
* 1 C. diced cooked chicken
* 4 med. green onions, chopped (about 1/2 C.)
* vegetable oil
* 1 container (8 oz.) sour cream

Directions

Top each of 4 tortillas with 1/2 C. cheese, 1/4 C. salsa, 1/4 C. chicken and 2 Tbs. green onions. Brush the edges of the tortillas with water. Top with the remaining tortillas and press the edges to seal.

Grilled Beef Fajitas Recipe

A contact grill cooks the filling in a flash for fajitas that are bursting with fresh flavors.

Ingredients

1/2 lb. boneless beef sirloin steak, cut into thin bite-size strips
2 slices (1/2 inch thick) large onion, separated into rings
1/2 medium green bell pepper, cut into thin bite-size strips
2 Tbs. fajita seasoning
2 Tbs. lime juice
4 8-inch flour tortillas
4 Tbs. sour cream
4 Tbs. salsa

Directions

Heat closed contact grill 5 minutes. Meanwhile, in large nonmetal dish or resealable food-storage plastic bag, mix steak, onion, bell pepper and fajita seasoning; stir or turn bag to coat. When grill is heated, place steak and vegetables on bottom grill surface, spreading evenly; close grill. Cook 4-6 minutes or until steak is desired doneness and vegetables are crisp-tender. Place steak and vegetables on plate; drizzle with lime juice.

Grilled Asparagus Tacos Recipe

Ingredients

16 asparagus spears
4 corn tortillas
1/4 C. Monterey jack cheese, shredded
1/4 C. cheddar cheese, shredded
Salt and pepper to taste
Olive oil
8 taco shells

Directions

Soak asparagus in cold water for 30 minutes. Preheat grill. Place asparagus on hot grill and cook until they start to soften and have good grill marks. Remove from grill. Place 4 spears in each taco, sprinkle with salt and pepper and add 1/4 of the cheese. Fold, brush the outside with olive oil and place the whole thing back on the grill off the heat for a couple of minutes or until the outside is crispy and the cheese is melted.
