Spicy Barbecued Chops Recipe

Add some heat to your barbecued chops next time you decide to grill.

Ingredients

    * 1 Kg. lamb forequarter (barbecue) chops
    * 1/4 C. tomato sauce
    * 2 Tbs. barbecue sauce
    * 2 tsp. Worcestershire sauce
    * 1 Tbs. brown vinegar
    * 1 tsp. prepared English mustard
    * 2 Tbs. brown sugar (or to taste)

Directions

Trim chops if necessary. Mix remaining ingredients in a jug/bowl. Baste both sides of the chops and leave to marinate for at least 20 minutes (or until ready to cook). Sear chops on each side on barbecue, brush with glaze as you turn them. Turn and baste frequently during cooking. Serve with your favorite pasta and potato salads.

1 tsp. crushed coriander seed
1 tsp. crushed cumin seed
1 drizzle fish sauce
1/2 head garlic, minced
3 sm. shallots, minced

Grilled Meat Skewers with Bay Leaves Recipe

This recipe uses an enormous amount of bay leaves (20!) for perfectly seasoned beef that is grilled to perfection.

Ingredients

1 1/2-2 lb. pork or lamb shoulder, or beef tenderloin (filet mignon), cut into 1 1/2-2-inch chunks
3 Tbs. extra virgin olive oil
Salt and pepper to taste
1 Tbs. minced garlic
15-20 bay leaves, preferably fresh.

Directions

Start charcoal or gas grill, with the fire moderately hot, and the rack about 4 inches from the heat. If using wood skewers, soak in water while you prepare the meat. Toss meat with oil, salt, pepper and garlic. Skewer meat alternately with bay leaves; if leaves break, jam between meat chunks. Grill the meat 2-5 minutes per side, depending on the fire’s heat and how well done you like your meat. Remove and serve.

Grilled Lemon Pepper Lamb Recipe

Ingredients

4 3/4 in. lamb steaks
2 Tbs. olive oil
1 Tbs. red wine vinegar
1 Tbs. minced onion
1 tsp. minced garlic
1 1/2 tsp. lemon pepper

Directions

Combine all ingredients but the lamb in a small bowl and brush the mixture on the steaks. Grill until desired doneness, about 8-10 minutes on each side, basting with the sauce as they cook.

Herbs de Provence Crusted Lamb Chops Recipe

The savory coating of Dijon mustard and dried herbs also tastes great on chicken thighs or beef fillets. Herbes de Provence is a combination of several dried herbs–including lavender, thyme, rosemary, and basil–that evoke flavors from the south of France.

Ingredients

1 Tbs. dried herbes de Provence
2 Tbs. Dijon mustard
1/2 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1 garlic clove, minced
8 4 oz. lamb loin chops, trimmed
Cooking spray

Directions

Prepare grill. Combine first 5 ingredients; rub evenly over both sides of lamb. Place lamb on a grill rack coated with cooking spray; grill 4 minutes on each side or until desired degree of doneness.
