Joan’s Chicken Marinade Recipe

A quick and easy flavorful marinade for grilling chicken. When I made it for my friend joan she LOVED it!

Ingredients

Chicken tenders work best but any parts can be used
1/4 C. soy sauce
3 Tbs. lemon juice
3/4 tsp. ground mixed dried herbs
1/2 tsp. ginger
1 clove garlic, minced
1/4 tsp. onion powder
Dash pepper
3 Tbs. cooking oil

Directions

Whisk together marinade ingredients and pour over chicken. Let marinate several hours or overnight. Remove from marinade and grill.

Grilled Meat Skewers with Bay Leaves Recipe

This recipe uses an enormous amount of bay leaves (20!) for perfectly seasoned beef that is grilled to perfection.

Ingredients

1 1/2-2 lb. pork or lamb shoulder, or beef tenderloin (filet mignon), cut into 1 1/2-2-inch chunks
3 Tbs. extra virgin olive oil
Salt and pepper to taste
1 Tbs. minced garlic
15-20 bay leaves, preferably fresh.

Directions

Start charcoal or gas grill, with the fire moderately hot, and the rack about 4 inches from the heat. If using wood skewers, soak in water while you prepare the meat. Toss meat with oil, salt, pepper and garlic. Skewer meat alternately with bay leaves; if leaves break, jam between meat chunks. Grill the meat 2-5 minutes per side, depending on the fire’s heat and how well done you like your meat. Remove and serve.

Marinated Char-Grilled Chicken Breast Recipe

This marinade seasons the chicken with Dijon mustard, red wine vinegar, lemons and limes, garlic and more for a truly flavorful chicken.

Ingredients

1/2-3/4 C. Dijon mustard
1 tsp. ground black pepper
1/4 C. red wine vinegar
Juice of 2 lemons and limes
3 cloves garlic, chopped
1/4 C. gingerroot, peeled and minced
4 drops Worcestershire sauce
About 2 C. olive oil
1/2 C. fresh herbs such as basil, tarragon, rosemary, cilantro or chervil, minced fine

Directions

Except for the oil and herbs, pulse all the ingredients in a food processor 3 times. Add the oil in a steady stream until the mixture is emulsified. Reserve half of the marinade to brush on during grilling.

2 12-oz. boneless rib eye steaks, cut 1 inch thick

Grilled Prosciutto and Basil-Wrapped Shrimp Recipe

This colorful dish can be made as an appetizer or a full meal - either way it’s delicious.

Ingredients

24 fresh basil leaves
12 thin slices prosciutto, each cut in half lengthwise
24 extra-large shrimp, peeled and deveined, or large sea scallops
24 bamboo skewers, soaked in water for at least 30 minutes before grilling

Garlic Dipping Sauce:
1/3 C. red wine vinegar
2 Tbs. Dijon mustard
1 large clove garlic, chopped
1 C. olive oil

Directions

Place 1 basil leaf at the short end of a slice of prosciutto and a shrimp on top of the basil. Roll the shrimp in the prosciutto, then thread lengthwise onto a skewer. Repeat with the remaining basil, prosciutto, and shrimp. Place the skewers on a baking sheet and refrigerate until ready to cook.

Grilled Rosemary Shrimp Recipe

1/4 C. finely chopped garlic, mashed to a paste with 1 tsp. coarse salt
2 Tbs. minced fresh rosemary leaves plus sprigs for garnish
3 Tbs. olive oil plus oil for brushing shrimp
16 jumbo shrimp (about 10 per lb.)
4 12-inch bamboo skewers
Lemon wedges as an accompaniment
