Ingredients
* 2 or 3 cans of tuna fish
* 2/3 C. chopped celery
* 1 C. (or less) breadcrumbs
* 1 Tbs. lemon juice
* 2 tsp. minced garlic
* 3/4 C. grated cheese of your choice
* 1/4 to 1/3 C. of thousand island dressing
Directions
Mix all ingredients together and shape into patties. Cook in a skillet or on the grill until bread crumbs begin to brown. Flip burger and cook on both sides.

A deliciously light and refreshing tropical dish for the spring/summer season. This requires only 6 ingredients for a full meal!

Ingredients
* tilapia fillets
* 1/2 whole pineapple, cubed
* 1 red bell pepper
* 2-4 C. fresh baby spinach
* 1 scallion
* 2 C. white jasmine/basmati rice
* Old Bay seasoning (to taste)
Directions
Combine pineapple and sliced red pepper in a saute pan. Cook over medium heat until soft. Season tilapia with Old Bay (or similar seafood seasoning) - only lightly. Cook on the stove top or on the grill just until fish flakes.

In this dish, lime juice and fresh basil combine to give the fish a fresh and complex flavor. The first time I made this for guests and described what I’d put on the fish, everyone kept asking, “That’s it? That’s so simple!” I believe that the mark of a really good dish is simplicity; few ingredients combine so well that they make a great dish.

Ingredients
6 shark steaks
1/2 C. soy sauce
1/4 C. ketchup
1/2 C. orange juice
1/4 C. chopped fresh parsley
2 Tbs. lemon juice
2 cloves garlic, minced
1/3 Tbs. ground pepper
Directions
Combine soy sauce, orange juice, catsup, chopped parsley, lemon juice, pepper, and minced garlic. Place fish in a shallow baking dish and pour marinade over them. Cover and marinate in refrigerator for 2 hours. Remove fish from marinade, reserving marinade. Grill fish over hot coals 6 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with remaining marinade.
