Basil Corn on the Cob Recipe

Ingredients

* 6 lg. ears sweet corn in husks
* 6 Tbs. butter, softened
* 1/2 tsp. dried basil
* 1/4 tsp. sugar
* dash salt
* dash garlic salt
* 1 C. fresh basil leaves
* lime wedges

Directions

Carefully peel back corn husks to within 1 inch of bottoms; remove silk. In a small bowl, combine the butter, dried basil, sugar, salt and garlic; spread over corn. Place basil leaves over butter mixture. Rewrap corn in husks and secure with kitchen string. Place in a stockpot; cover with cold water. Soak for 20 minutes; drain. Grill corn in husks, covered, over medium heat for 25-30 minutes or until tender, turning often. Serve with lime wedges.

Grilling gives these pita pizzas extra flavor, however, if it’s raining outside, pop them in a 350-degree oven for 4-5 minutes or until the cheese is melted.

Ingredients

* 1 lg. onion, thinly sliced
* 1 Tbs. plus 1 tsp. olive oil, divided
* 2 garlic cloves, minced
* 2 C. fresh arugula or baby spinach
* 4 pita breads (6 in.)
* 8 oz. fresh mozzarella cheese, thinly sliced
* 2 plum tomatoes, cut into 1/4-in. slices
* 1/4 C. sliced ripe olives
* 2 Tbs. capers, drained

Directions

In a small skillet, saute onion in 1 Tbs. oil until tender. Add garlic; saute 1 minute longer. Remove and keep warm. In the same pan, cook arugula just until wilted; remove and keep warm.

Grilled Lemon Chicken Kabobs Recipe

These yummy chicken and vegetable kabobs are so easy to make!

Ingredients

* 3/4 C. lemon dill sauce
* 2-3 boneless, skinless chicken breasts, cut into 1-inch chunks
* 2 zucchini, unpeeled and cut into 1/2 inch rounds
* one 10-oz. container whole white mushrooms
* 1 large red bell pepper, with seeds removed, cut into 1-inch pieces
* 10 cherry tomatoes

Directions

Marinate chicken in 1/3 C. sauce for a few hours in the fridge.  Assemble skewers by alternating ingredients.  Dispose of marinade that the chicken was in, but use the remaining sauce to brush the skewers.

Cook on the grill.

Ingredients

* lg. jalapeno peppers
* 8-oz. fat free cream cheese
* 1 lb. hot or sage rolled sausage, can use half of each
* 1 C. white cheddar cheese or mozzarella cheese
* 1/2 C. Parmesan cheese
* 2 Tbs. garlic powder
* 2 Tbs. onion powder
* 1 tsp. season salt
* 1/2 tsp. black pepper

Directions

Cut peppers in half. Start off by seeding and deveining your peppers. Boil them for 5 minutes. Cream the sausage, all your cheeses, garlic powder, onion powder, season salt and pepper together. Make sure you do not cook the sausage.

Ingredients

* 3 lg. ears corn, husks and silks removed
* 4 (8- to 10-inch) low-fat flour tortillas
* 1 C. reduced-fat Monterey Jack cheese, shredded
* 1/2 C. salsa
* 2 green onions, trimmed and thinly sliced
* 1 head romaine lettuce, thinly sliced
* 1 Tbs. olive oil
* 1 Tbs. cider vinegar
* 1/2 tsp. ground black pepper
* 1/4 tsp. salt

Directions

Prepare grill. Place corn on hot grill rack over medium-high heat. Cover grill and cook corn, turning frequently, until brown in spots, 10 to 15 minutes. Transfer corn to plate; set aside until cool enough to handle. With sharp knife, cut kernels from cobs.

Salad of Peppers Recipe

Ingredients

* 10 banana peppers
* 1 sm. can tomato sauce
* 1 tsp. salt
* 1 fresh tomato
* garlic, chopped
* 1 Tbs. vinegar
* 3 Tbs. oil

Directions

Place peppers on barbecue and roast or broil. Peel skins. Cut fresh tomato in small pieces. Add to tomato sauce, oil, chopped garlic and simmer until tomato pieces are tender. Cut up peppers and add to sauce. Simmer for 3 more minutes. Chill and serve as salad.
